Job Summary

The Butchery Chef / Kebab Chef is responsible for the preparation, processing, marination, and cooking of meat products while ensuring the highest standards of quality, hygiene, food safety, and presentation. The role requires expertise in meat cutting, portion control, and preparation of various kebab and grilled specialties.

Key Responsibilities

  • Perform professional meat cutting, trimming, deboning, portioning, and preparation of poultry, beef, lamb, and seafood.
  • Prepare and marinate a variety of kebabs, grills, and barbecue items according to standard recipes.
  • Ensure consistency in taste, quality, and presentation of all dishes.
  • Maintain proper storage, labeling, and rotation of meat products following FIFO procedures.
  • Monitor meat quality, freshness, and stock levels.
  • Minimize wastage and ensure maximum yield from all meat products.
  • Maintain cleanliness and sanitation of the butchery and grill sections.
  • Follow HACCP, food safety, and hygiene standards at all times.
  • Assist in menu planning and development of new kebab and grill items.
  • Coordinate with purchasing and stores departments regarding meat requirements.
  • Ensure all equipment is used and maintained safely.
  • Support banquet, buffet, and à la carte operations as required.
  • Train and guide junior kitchen staff when necessary.
  • Perform any other duties assigned by the Executive Chef or Kitchen Management.

Qualifications & Experience

  • Minimum 2–3 years of experience as a Butchery Chef, Kebab Chef, or Grill Chef in a hotel or restaurant.
  • Strong knowledge of meat cuts, processing, portion control, and marination techniques.
  • Experience in preparing Arabic, Turkish, Indian, or mixed grill kebab varieties is preferred.
  • Knowledge of HACCP and food safety standards.
  • Ability to work efficiently in a fast-paced kitchen environment.

Pay: From AED2,000.00 per month
