Job Description

Provides functional assistance and direction to the kitchen operation as assigned.

Interacts with individuals outside the restaurant, including clients, suppliers, government officials, competitors, and other members of the local community.

Coordinates functions and activities with other Food & Beverage department heads.

Assists the Executive Chef and management in supervising all kitchen employees, facilities, and costs to ensure departmental profit.

Controls and analyzes operations on an ongoing basis.

Maintains quality levels of production and presentation, including employee meals.

Ensures guest satisfaction.

Handles merchandising and marketing.

Manages operating costs, payroll, and food costs.

Maintains cleanliness, sanitation, and hygiene standards.

Ensures optimum performance in all assigned areas.

Assists in food production, preparation, and presentation to ensure high quality.

Establishes and maintains effective employee relations.

Participates in hiring, orientation, coaching, and disciplinary actions to ensure proper staffing and productivity.

Conducts training sessions for kitchen staff.

Assists in menu development and pricing considering local requirements, market needs, competition, trends, recipes, costs, and availability.

Informs management of operational and personnel matters daily.

Supervises food service in outlets and staffing levels to minimize overtime.

Ensures health and safety regulations are followed.

Oversees ordering and receiving procedures.

Reports incidents to the Executive Chef.

Checks food quality and preparation methods.

Ensures proper use of kitchen utensils and equipment.

Assists in recipe creation and menu ideas.

Controls cooking, portioning, garnishing, and presentation of dishes.

Participates in special projects and other tasks as needed.

Provides excellent guest service and handles complaints promptly.

Follows fire prevention and evacuation procedures.

Maintains security awareness and reports suspicious activities.

Develops relationships with other departments and local community representatives.

Coordinates with Materials, Engineering, and Outlet Managers for efficient operations.

Recommends modernization and improvements for better guest satisfaction.

Communicates policies, procedures, and guest feedback to the team.

Enforces health, safety, and emergency procedures.

Maximizes employee productivity and minimizes payroll costs.

Supports employee welfare, safety, training, and development.

Ensures staff adherence to hotel policies and procedures.

Organizes training activities and conducts performance appraisals.

Promotes friendly, courteous, and efficient service.

Qualifications

HACCP:
Full compliance with HACCP standards and certification.

Experience:

At least 7-10 years post-apprenticeship in a similar industry or 4-5 star establishment.

Skills:
Able to assist the Executive Chef in rostering, management, ordering, receiving, and cost control.
