Execute high-volume prep work with consistency and speed, following standardized recipes and portion controls. This includes base sauces, dressings, protein preparation, and bakery/fermentation support.

Assist the Commis 1 and Chef de Partie in the hot/cold sections during service. Ensure every plate leaving the pass meets our exact quality and aesthetic standards.

Maintain a deep understanding of our menu engineering. Ensure all ingredients are checked for freshness and that FIFO (First-In, First-Out) stock rotation is strictly followed.

Maintain a clean, organized, and sanitary workstation at all times. Strictly adhere to HACCP protocols, temperature logging, and food safety standards.

Actively participate in daily briefings. Communicate clearly with the team regarding stock levels, prep progress, and service flow.

Show a willingness to learn advanced culinary techniques, including fermentation, sous-vide, or specialized plating, as required by the business.

Requirements & Qualifications

Minimum 2 years of experience in a reputable restaurant or hotel kitchen. A background in a production kitchen or central commissary environment is highly advantageous.
