Job Summary

The Assistant Cook supports the Head Chef and Sous Chef in the preparation, cooking, and presentation of meals for Client employees and guests. The role ensures that food is prepared safely, hygienically, and in accordance with approved menus, recipes, and Client food safety standards. The Assistant Cook also assists with kitchen sanitation, food storage, stock rotation, and compliance with HACCP and company HSE requirements.

Key Responsibilities

Food Preparation

  • Assist in preparing ingredients, including washing, peeling, chopping, slicing, and portioning vegetables, meat, poultry, seafood, and other food items.
  • Prepare basic dishes, sauces, soups, salads, sandwiches, and desserts as directed by the Chef.
  • Follow standardized recipes and portion control guidelines.
  • Support the preparation of breakfast, lunch, dinner, and special meals.
  • Assist with buffet setup and replenishment during meal service.

Cooking Support

  • Assist in cooking food items under the supervision of the Chef.
  • Ensure food is cooked and served according to quality and food safety standards.
  • Monitor cooking times and temperatures as instructed.
  • Report any issues related to food quality, equipment, or ingredients.

Food Safety & Hygiene

  • Comply with HACCP principles and food safety procedures.
  • Practice good personal hygiene and maintain a clean uniform.
  • Wash and sanitize food preparation areas, utensils, and equipment.
  • Prevent cross-contamination by separating raw and cooked foods.
  • Ensure proper food storage and temperature control.
  • Label and date food items in accordance with FIFO/FEFO procedures.

Kitchen Operations

  • Assist with receiving and inspecting food deliveries.
  • Store food items correctly in dry stores, refrigerators, and freezers.
  • Monitor stock levels and inform the Chef of shortages.
  • Support inventory counts and stock rotation.
  • Help maintain cleanliness and organization of kitchen and storage areas.

Equipment Handling

  • Operate kitchen equipment safely and correctly.
  • Clean and maintain cooking utensils, equipment, and workstations.
  • Report damaged or malfunctioning equipment immediately.

Health, Safety & Environment (HSE)

  • Comply with all Client HSE policies, procedures, and site regulations.
  • Wear the required Personal Protective Equipment (PPE).
  • Follow safe manual handling and kitchen safety practices.
  • Report hazards, accidents, near misses, and unsafe conditions promptly.
  • Participate in mandatory HSE, food safety, and toolbox training.

Teamwork

  • Work closely with Chefs, Waiters, Kitchen Helpers, and Stewards.
  • Assist during peak meal periods and special events.
  • Maintain professional communication and teamwork.
  • Perform other duties assigned by the Chef or Supervisor.

Qualifications

  • High school diploma or equivalent (preferred).
  • Certificate or Diploma in Culinary Arts, Food Production, or Hospitality is an advantage.
  • Valid Food Handler Certificate (mandatory).
  • HACCP or Food Safety training is preferred.
  • Minimum 2 years of experience as an Assistant Cook, Commis Chef, or Kitchen Assistant.

Physical Requirements

  • Physically fit to stand for extended periods.

  • Ability to work rotating shifts, weekends, and public holidays.
  • Ability to work in hot kitchen environments.

HSE & Compliance Requirements

  • Comply with all Client site regulations and company policies.
  • Adhere to HACCP, food safety, and sanitation standards.
  • Maintain high standards of personal hygiene and grooming.
  • Wear prescribed PPE while on duty.
  • Participate in mandatory safety and food safety training.

  • Timely preparation of food according to production schedules.
  • Compliance with HACCP and food safety requirements.
  • Food quality and consistency.
  • Proper food storage and stock rotation (FIFO/FEFO).

Working Conditions

  • Work is performed in industrial kitchen and catering facilities within the site.
  • Exposure to heat, steam, kitchen equipment, and refrigerated storage areas.
  • Shift work is required based on operational meal schedules.
  • Strict adherence to HSE, hygiene, security, and food safety standards is mandatory.
