The Role

As a Sous Chef – Peruvian Cuisine, you will be responsible for overseeing the day-to-day culinary operations of the Peruvian kitchen, working closely with the Executive Chef to ensure the production of authentic, high-quality dishes while maintaining operational efficiency and consistency.

You will lead the culinary brigade, assist in menu planning and recipe development, and uphold rigorous standards in food safety, hygiene, and operational excellence. This leadership role involves mentoring junior chefs, fostering a culture of culinary creativity, and ensuring that all dishes showcase the bold, vibrant, and authentic flavors of Peruvian cuisine.

Key Areas of Responsibilities

Please note that the responsibilities outlined below are not exhaustive. Red Sea Global Hospitality employees continuously innovate in caring for the needs of the business, their guests, and their colleagues. As a Sous Chef – Peruvian Cuisine, you will need to:

  • Assist the Executive Chef in overseeing daily culinary operations, ensuring that all Peruvian dishes are prepared and presented to the highest standards.
  • Supervise and guide culinary staff in Peruvian cooking techniques, ensuring consistency, quality, and efficiency in food preparation and presentation.
  • Collaborate with the Executive Chef in menu planning, recipe development, and seasonal Peruvian offerings, incorporating traditional and modern culinary techniques.
  • Ensure the kitchen is operated in a safe, efficient, and hygienic manner in compliance with all health and safety standards and regulations.
  • Assist in managing food costs, inventory, and stock rotation, ensuring proper ordering, minimal waste, and optimal ingredient quality.
  • Monitor and maintain the quality of all dishes served, ensuring consistency in flavor, presentation, and portion size.
  • Oversee the training and development of junior culinary staff, fostering a culture of learning, teamwork, and excellence in Peruvian cuisine.
  • Work with the Executive Chef to develop and implement culinary operational procedures that ensure smooth, efficient service.
  • Assist with recruitment, onboarding, and evaluation of culinary team members.
  • Maintain effective communication with front-of-house teams to ensure seamless service and exceptional guest satisfaction.
  • Ensure all culinary equipment is maintained in working order and coordinate with maintenance staff for timely repairs.
  • Perform any additional duties as required to support the overall success of the Peruvian culinary operations.
