A fine dining restaurant group in Riyadh is looking for a Sous Chef specialized in Persian cuisine — someone who knows the difference between good tahdig and perfect tahdig, treats saffron with respect, and carries the depth of Persian culinary tradition in every dish.
You’ll work alongside the Executive Chef to deliver an authentic, elevated Persian dining experience — from koobideh and barg to khoresh and herb polo — all at a fine dining standard.

Key Responsibilities
- Lead the Persian cuisine station and oversee kitchen operations in the Executive Chef’s absence
- Execute and maintain consistency across all Persian dishes — kebabs, stews, rice variations, appetizers, and desserts
- Assist in menu development and seasonal specials while respecting traditional foundations
- Supervise, train, and mentor junior kitchen staff on Persian techniques and spice profiles
- Control food cost through proper portioning, inventory management, and waste reduction
- Ensure compliance with food safety, hygiene, and HACCP standards
- Coordinate with the Executive Chef on sourcing specialty ingredients
Qualifications Experience
- 3–5 years as a Sous Chef or Senior Chef de Partie
- Deep expertise in Persian cuisine — techniques, flavor profiles, and traditional recipes
Education
- Culinary diploma or degree from a recognized institute
Skills
- Mastery of Persian cooking — grilling, slow‑cooking, rice preparation, spice blending
- Kitchen leadership under high‑pressure service
- Strong organizational skills and mise en place discipline
Language
- English — professional proficiency (required)
