Job Description

Supervise and participate in cooking and preparation of food, direct the preparation, seasoning, and cooking of salads, soups, fish, meats, vegetables, desserts, or others.

Responsible for developing menus, planning, determining costs and pricing menu items, taking into account factors such as seasonal availability of ingredients and the likely number of customers.

Estimate amounts and costs of required supplies, such as food and ingredients, prepare and cook foods of all types, either on a regular basis or for special guests or functions.

Raise food requisition in coordination with lead cook to ensure efficient operation.

Understand produce ingredients and compliance with company standards.

Supervise and direct activities of kitchen staff. Instruct cooks and other workers in the preparation, cooking, garnishing, and presentation of food, determine how food should be presented, and create decorative food displays.

Determine production schedules and staff requirements necessary to ensure timely delivery of services.

Check the quality of raw and cooked food products to ensure the standards are met.

Responsible for checking the quantity and quality of received stocks, and ensure the stocks are kept securely and under the correct conditions applicable to each type of commodity stored.

Follow up with the storekeeper to ensure that the correct stocks are kept.

Inspect facilities & equipment in coordination with the Maintenance staff to ensure that no equipment breaks down.

Ensure that all areas under your control satisfy hygiene conditions and comply with company and statutory requirements, as per QHSE, HACCP.

Monitor sanitation practices to ensure that employees follow standards and regulations.

Induct new staff members in their job and train them when required on the job.

Ensure regularstaff trainingis carried out to deliver food to specification and demonstrate new cooking techniques and equipment to staff as per company standards.

Any other duties and responsibilities as may be identified.

Desired Candidate Profile

Technical, Trade, or Vocational School Degree/Diploma in food production.

Minimum 3-5 years experience in the same position in food or culinary services in large volume, restaurants, hotels, catering services, etc.

Responsible food preparation, cooking, andfood presentationskill.

Experienced in menu planning, pre-costing.

Experienced in hygiene standards and health and safety regulations.

Goodcommunicationand strongleadershipskills.

Basic/Advanced Food Hygiene Certificate.
