Job Summary

The Salad and Sandwich Maker is responsible for preparing, assembling, and presenting a variety of fresh salads, sandwiches, cold appetizers, and related food items for Client employees and guests. The role ensures that all products are prepared in accordance with approved recipes, portion control standards, and HACCP food safety requirements while maintaining exceptional quality, freshness, and hygiene.

Key Responsibilities

Food Preparation

  • Prepare a variety of fresh salads, sandwiches, wraps, cold appetizers, and garnishes according to approved recipes.
  • Wash, peel, cut, slice, and prepare vegetables, fruits, cheeses, deli meats, and other ingredients.
  • Prepare salad dressings, spreads, and sandwich fillings as directed by the Chef.
  • Assemble sandwiches and salads with consistent quality and presentation.
  • Prepare packed meals, lunch boxes, and takeaway items as required.

Food Presentation

  • Arrange and garnish food attractively for buffet displays and meal service.
  • Ensure buffet salad stations remain clean, organized, and fully replenished.
  • Monitor the freshness and appearance of displayed food.
  • Replace food items as necessary to maintain quality standards.

Food Safety & Hygiene

  • Follow HACCP principles and company food safety procedures.
  • Maintain proper food temperatures during preparation, storage, and service.
  • Prevent cross-contamination between raw and ready-to-eat foods.
  • Label, date, and store prepared food in accordance with FIFO/FEFO procedures.
  • Maintain excellent personal hygiene and wear a clean uniform and appropriate PPE.

Kitchen Operations

  • Prepare ingredients according to daily production plans.
  • Monitor stock levels of vegetables, breads, cold cuts, cheeses, sauces, and other ingredients.
  • Report shortages or quality issues to the Chef.
  • Assist with receiving, checking, and storing deliveries.
  • Support inventory counts and stock rotation activities.

Cleaning & Sanitation

  • Clean and sanitize food preparation areas before, during, and after production.
  • Wash and sanitize cutting boards, knives, utensils, containers, and equipment.
  • Ensure refrigerators, cold rooms, and workstations remain clean and organized.
  • Dispose of food waste according to company and Client environmental procedures.

Health, Safety & Environment (HSE)

  • Comply with all HSE policies, procedures, and site regulations.
  • Wear required Personal Protective Equipment (PPE) while on duty.
  • Report hazards, incidents, equipment defects, or near misses immediately.
  • Follow safe food handling and manual handling practices.
  • Participate in mandatory HSE and food safety training.

Teamwork

  • Work closely with Chefs, Assistant Cooks, Waiters, and Kitchen Helpers.
  • Support meal preparation during peak service periods.
  • Assist with special events, VIP meals, and catering functions.
  • Perform additional duties assigned by the Chef or Supervisor.

Qualifications

  • High school diploma or equivalent (preferred).
  • Certificate or Diploma in Food Preparation, Culinary Arts, or Hospitality is an advantage.
  • Valid Food Handler Certificate (mandatory).
  • HACCP or Food Safety training is preferred.
  • Minimum 2 years of experience in preparing salads, sandwiches, cold kitchen items, or Garde Manger operations.

Skills & Competencies

  • Knowledge of salad and sandwich preparation techniques.
  • Understanding of food safety, hygiene, and sanitation practices.
  • Good knife handling and food presentation skills.
  • Ability to follow recipes and production schedules.
  • Attention to detail and consistency in food quality.
  • Good communication skills in English.
  • Ability to work efficiently under pressure.
  • Strong teamwork and organizational skills.

Physical Requirements

  • Ability to stand for long periods during food preparation.
  • Ability to lift and carry food supplies and kitchen equipment (up to 20 kg).
  • Ability to work in chilled preparation rooms and industrial kitchen environments.
  • Willingness to work rotating shifts, weekends, and public holidays as required.

  • Comply with all site rules and company policies.
  • Adhere to HACCP, food safety, and sanitation standards.
  • Maintain high standards of personal hygiene and grooming.
  • Wear prescribed PPE while handling food.
  • Participate in mandatory HSE, hygiene, and food safety training.

Working Conditions

  • Work is performed in cold kitchen, pantry, and food preparation areas within the catering facility.
  • Frequent handling of fresh produce, chilled ingredients, and refrigerated storage.
  • Exposure to refrigerated environments, food preparation equipment, and busy meal service operations.
  • Shift work is required to support breakfast, lunch, dinner, and special catering services.
  • Strict compliance with HSE, food safety, hygiene, and security requirements is mandatory.
