Role Overview
The Head Pastry Chef is responsible for leading the full pastry direction and pastry kitchen operations of the business. This role requires a creative, detail-oriented, and hands-on pastry professional who can develop new desserts, pastries, cakes, and sweet products while managing daily pastry production and maintaining the highest standards of quality, consistency, presentation, and hygiene.
The Head Pastry Chef will oversee everything related to pastry development and production, including recipe creation, R&D, menu planning, production schedules, team training, costing, stock control, supplier coordination, equipment, and operational execution.
Key Responsibilities
Pastry Development & R&D
- Create, test, and develop new pastries, desserts, cakes, plated desserts, viennoiserie, and seasonal sweet items.
- Lead research and development for signature pastry items, premium desserts, retail products, and limited-time offerings.
- Continuously improve existing recipes to enhance taste, texture, presentation, shelf life, consistency, and profitability.
- Develop standardized pastry recipes with accurate ingredients, quantities, preparation methods, baking/chilling times, portion sizes, decoration, and presentation standards.
- Conduct tasting sessions, product trials, and feedback reviews before launching any new pastry item.
- Stay updated on pastry trends, modern techniques, ingredients, presentation styles, and luxury dessert concepts.
Pastry Kitchen Operations
- Oversee all daily pastry operations, including preparation, baking, finishing, decoration, display setup, packing, and storage.
- Ensure all pastry items are produced according to approved recipes, quality standards, and presentation guidelines.
- Manage production workflow to ensure consistency, efficiency, and timely delivery.
- Establish and enforce pastry SOPs, production checklists, preparation schedules, and quality control standards.
- Monitor product freshness, shelf life, wastage, portion control, and production accuracy.
- Ensure pastry items are ready for service, display, delivery, events, or retail requirements.
Menu Planning & Cost Control
- Design and update pastry menus in line with the brand concept, seasonality, customer demand, and profitability.
- Calculate pastry item costs and ensure products meet target margins.
- Work closely with management on pricing, menu engineering, and product performance.
- Reduce waste through accurate production planning, proper storage, portioning, and stock control.
- Review ingredient usage and recommend improvements to increase efficiency and reduce cost.
Team Leadership & Training
- Lead, train, supervise, and motivate the pastry team.
- Train the team on pastry techniques, baking, finishing, decoration, hygiene, recipe execution, and presentation standards.
- Assign duties, manage production schedules, and ensure proper manpower planning.
- Build a culture of discipline, precision, creativity, teamwork, and continuous improvement.
- Support recruitment, onboarding, and performance evaluation of pastry staff.
Inventory, Purchasing & Supplier Coordination
- Monitor stock levels of chocolate, cream, butter, fruits, nuts, flour, sugar, fillings, packaging, and pastry ingredients.
- Work with suppliers and management to source premium pastry ingredients.
- Evaluate new ingredients, decorations, packaging, tools, and equipment.
- Ensure received goods meet required quality, quantity, and specification standards.
- Maintain proper storage, labeling, FIFO practices, expiry tracking, and inventory control.
Hygiene, Equipment & Maintenance
- Ensure full compliance with food safety, hygiene, and municipality requirements.
- Maintain cleanliness and organization of all pastry preparation, production, and storage areas.
- Oversee the proper use, cleaning, and maintenance of ovens, mixers, refrigerators, freezers, blast chillers, tempering machines, display chillers, and pastry tools.
- Identify equipment issues, repairs, replacements, and upgrades.
- Ensure the pastry kitchen layout and equipment support efficient production and high-quality output.
Required Skills & Experience
- Proven experience as a Head Pastry Chef, Senior Pastry Chef, Pastry Sous Chef, or similar role in a high-quality restaurant, café, hotel, bakery, or pastry production kitchen.
- Strong ability to create new pastry recipes and lead pastry R&D.
- Excellent knowledge of pastry techniques, baking, chocolate, creams, fillings, doughs, decoration, and dessert presentation.
- Strong understanding of pastry costing, production planning, hygiene, inventory, and team management.
- Strong leadership, communication, creativity, and problem-solving skills.
- Ability to work under pressure while maintaining precision and consistency.
- Experience in recipe standardization, SOP creation, and team training.
- Passion for premium pastry, innovation, presentation, and quality.
Pay: AED9,000.00 – AED15,000.00 per month
