Job Summary:
The Demi Chef de Partie is responsible for assisting the Chef de Partie in managing a specific section of the kitchen and ensuring that dishes are prepared and served according to the restaurant’s standards. This role offers an opportunity to develop culinary skills further while contributing to the overall operation of the kitchen.

Key Responsibilities:

Section Management:
Assist the Chef de Partie in running a specific section of the kitchen (e.g., pastry, grill, sauces, or fish).
Ensure the section is properly set up before service, including organizing ingredients, prepping food, and ensuring the kitchen area is clean and functional.
Oversee food preparation for your section during service, ensuring that dishes meet the quality standards and are prepared in a timely manner.
Food Preparation & Cooking:
Prepare ingredients and cook dishes according to the recipes and specifications provided by the Chef de Partie or Head Chef.
Ensure food is cooked and presented to the highest standards and in line with the restaurant’s menu.
Take responsibility for ensuring that all food preparation is done efficiently, minimizing waste, and following portion control guidelines.
Quality Control:
Monitor the quality of ingredients and finished dishes within your section, ensuring everything is consistent in taste, texture, and presentation.
Maintain the high standards of food safety, hygiene, and cleanliness in the kitchen.
Ensure that food safety procedures are adhered to, including correct food storage, handling, and disposal.
Supervising and Training Junior Staff:
Support the Chef de Partie in supervising Commis Chefs or other junior kitchen staff.
Assist with training junior staff members in food preparation, safety protocols, and kitchen procedures.
Provide guidance and assistance as needed, ensuring junior staff members develop their skills.
Stock Control & Inventory Management:
Help monitor stock levels for your section, ensuring that ingredients and supplies are available for service without overstocking.
Assist in receiving and checking deliveries for quality and quantity.
Keep track of ingredient use and ensure minimal waste by following proper stock rotation techniques (FIFO – First In, First Out).
Kitchen Cleanliness & Organization:
Ensure your section is kept clean, organized, and compliant with health and safety standards.
Clean cooking equipment, utensils, and work surfaces regularly during service.
Make sure all equipment in your section is well-maintained and report any faults or issues to senior staff.
Assisting with Menu Development:
Contribute ideas and suggestions for menu items or improvements to dishes, particularly based on seasonal ingredients.
Work closely with the Chef de Partie and other senior chefs to develop specials or new menu items.
Working with Senior Chefs:
Assist the Chef de Partie with the day-to-day operations and support their leadership in the section.
Work closely with Sous Chefs and Head Chefs to ensure the kitchen operates smoothly, especially during service.
Communicate effectively with front-of-house staff to ensure dishes are served promptly and in accordance with customer preferences.

Qualifications & Skills:

A professional culinary qualification (e.g., culinary school or equivalent) is typically required.
At least 1-2 years of experience as a Commis Chef or in a junior kitchen role.
Strong knowledge of food preparation techniques and cooking methods.
Ability to work independently as well as part of a team.
A strong understanding of food safety and hygiene standards.
Excellent organizational skills and the ability to multitask during service.
Ability to manage time effectively, especially in a fast-paced kitchen environment.
Good communication skills, both with team members and other kitchen staff.
