An Executive Pastry Chef is responsible for overseeing all aspects of the pastry and bakery department to deliver an excellent Guest and Member experience while planning production and developing seasonal offerings.
What will I be doing?
As an Executive Pastry Chef, you are responsible for operating the pastry section of the kitchen while working closely with the Executive Chef and Sous Chef to deliver an excellent Guest and Member experience. Specifically, you will be responsible for performing the following tasks to the highest standards:
Lead the pastry and bakery team, deliveringinnovative, high-quality products with consistency andattention to detail.
Supervise and coordinate all pastry and dessert preparation and presentation.
Ensure excellent quality throughout the dessert offerings.
Bring creativity to the pastry offerings.
Plan production to facilitate daily requirements.
Develop appropriate seasonal menu offerings.
Stay updated on market trends and incorporate them into WA Doha Lusail’s offerings.
Ensure top-quality products are consistently served while maintaining cost control and profitability.
Foster alearning environment, providing coaching, mentoring, and personal development for the team.
Implement and monitor health and safety practices incollaborationwith the Hygiene Manager.
Overseestock management, purchasing, labor costs, and ensure efficientkitchen operations.
Maintain policies and procedures manuals, ensuring adherence to Hilton’s hygiene, uniform, and grooming standards.
Conduct daily kitchen briefings, monitor event orders, and ensure smoothcommunicationwith all departments.
Develop and implement training programs, performance reviews (PDRs), andsuccession planningforteam growth.
Managekitchen operationsin line with SOP and HACCP guidelines, ensuringfood safetyand minimizing waste.
Ensure accurate recipe and costings management, including properproduct handlingand FIFO procedures.
Build and maintain effective internal and external relationships.
Lead by example, maintaining high standards of personal appearance, hygiene, andcommunication.
Provide guidance to team members and assist with administrative duties, such as scheduling and payroll.
Continuously improvekitchen operationsbased on reports and feedback, striving for enhanced customer service.
What are we looking for?
A minimum of 3 years as an Executive Pastry Chef.
Prior Luxury hotel experience strongly preferred.
Approaches pastry in a creative way.
Has knowledge of International Cuisine.
Strong supervisory skills.
A current, valid, and relevant trade qualification (proof may be required).
Committed to delivering a high level of customer service.
Excellent planning and organising skills.
Dedicated to the delivery ofexceptional serviceandcontinuous improvement.
It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:
Ability to work a variety of shifts including weekends, days, afternoons, and evenings.
Proficiency with computers and computer programs, including Microsoft Word, Excel, and Outlook.
