Job Description

The Executive Pastry Chef manages the daily execution of all assigned pastry food production and service, maintaining standards of food quality, timeliness, cleanliness, and maintenance.

Responsible for all pastry and food stocks, including dry stores, replenishing as necessary, and informing the Executive Chef of shortages.

Familiar with food suppliers, their products, and placing orders based on business demand.

Supervise the smooth and efficient service and production of food by liaising with other departments and restaurant staff, ensuring all preparations are completed before service.

Train all new staff members in the department.

Promote safe kitchen practices, equipment use, and compliance with health and safety regulations.

Ensure all food controls and temperature logs are maintained and adhered to.

Maintain standards of food preparation and presentation.

Complete all daily paperwork according to company and government guidelines.

Participate in required training sessions.

Monitor staff punctuality and follow up as needed.

Ensure hygienic and productive work environments for all department staff.

Prevent pilferage from dry stores and refrigeration.

Maintain correct stock levels and rotation to control wastage and avoid overproduction.

Assist in managing food costs within set budgets.

Maintain and update section files and recipes.

Ensure quality control of all food prepared and cooked.

Keep main cool rooms tidy and clean, especially after service, to facilitate daily ordering.

Ensure health marks are collected and correctly documented.

Qualifications

One to two years of experience in a public contact position, preferably in an upscale or lifestyle hotel.

Proficiency in using computers and point of sale systems.

Gracious, friendly, and fun demeanor.

Ability to multitask and work efficiently in a fast-paced environment with high attention to detail.

Strong verbal and written communication skills in English.

Ability to maintain positive relationships with colleagues and departments.

Ability to work independently and foster teamwork.
