Job Responsibilities
§ Prepare and grill a variety of Arabic and Levantine meats, poultry, kebabs, kofta, shish tawook, lamb, and other grilled specialties according to approved recipes and restaurant standards.
§ Handle daily mise en place for the Grill Section, including portioning, skewering, seasoning, marinating, and preparing meats and accompaniments for service.
§ Operate charcoal and/or commercial grills safely while maintaining the correct cooking temperatures, doneness, flavor, tenderness, portion size, and presentation during service.
§ Maintain strict food safety, hygiene, storage, FIFO, and cross-contamination controls, while minimizing food wastage and supporting smooth kitchen operations during high-volume periods.
