Job Description
The Hygiene/Food Safety Officer is responsible for maintaining the highest standards of sanitation and hygiene. Ensuring all food served is free from microbiological, chemical, and physical contamination, and that work areas meet hygiene standards.
Implement and ensure personal hygiene standards.
Manage Critical Control Points (CCPs) procedures and evaluate corrective actions.
Maintain staff medical records.
Oversee premises hygiene and CCP implementation.
Coordinate engineering and F&B preventive maintenance.
Develop action plans for rectification.
Ensure proper delivery and storage of food, including supplier license tracking.
Conduct daily shift checklists, including chiller temperature controls.
Control dry store food preparation, storage, and serving points.
Regularly tour the kitchen with the executive chef, stewarding, and engineering staff to ensure cleanliness and hygiene.
Conduct weekly kitchen walkthroughs to address outstanding issues.
Implement and participate in food safety training for staff, evaluating training effectiveness.
Maintain documentation such as checklists for food prep, storage, and cost control.
Prepare monthly food safety and lab test reports.
Verify CCP and receiving records, ensuring compliance with health certificates for imported items.
Collect food samples and follow up on certificates and payments.
Gather information for any foodborne illness incidents.
Ensure completion of internal audits and health record verification for food handlers.
Verify stewarding and engineering files, including preventive maintenance and calibration records.
Conduct regular FSMS meetings, training sessions, audits, and briefings.
Qualifications
Experience in high-risk food environments.
Qualification in occupational health and safety or related field, or equivalent experience.
Knowledge of CCP procedures and workplace safety regulations.
Experience in worker engagement, incident management, training, risk management, and occupational hygiene.
Strong interpersonal, influencing, and problem-solving skills.
Effective time management and organizational skills.
Professional and proactive attitude with excellent interpersonal skills.
