– Prepare menu items within the assigned section according to recipes and quality standards.
– Ensure consistency in taste, portioning, and presentation for all items.
– Manage mise en place and ensure readiness for service at all times.
– Coordinate with the chef, dispatcher and other sections to ensure timely order execution.
– Monitor inventory, stock levels and communicate requisitions based on section needs.
– Minimize waste and control food cost within the section.
– Maintain cleanliness, organization, and hygiene in the work area.
– Ensure proper food handling, storage, and FIFO compliance.
– Supervise and support commis chefs within the section.
– Follow kitchen SOPs, hygiene and safety standards.
– Assist in training junior staff and maintaining performance standards.
– Take responsibility for troubleshooting issues in the station during service.
