We are seeking a talented Chef de Cuisine for the Floating World restaurant at SLS The Red Sea, a luxury resort opening in 2025 in collaboration with Ennismore. This project features 150 luxurious rooms, seven Food & Beverage outlets, and a spa sanctuary, catering to a diverse clientele seeking unique experiences at The Red Sea.

Job Description

The Chef de Cuisine – Floating World will oversee all culinary operations for the signature Japanese-influenced seafood restaurant, ensuring high standards of quality, authenticity, and innovation aligned with 5-star luxury expectations.

Responsibilities include:

Providing culinary innovation and trend anticipation.

Supporting development of the culinary concept and menu costing.

Monitoring quality control and consistency.

Training and developing kitchen staff.

Participating in media and brand promotion activities.

People Management

Sharing knowledge and best practices.

Conducting training and performance evaluations.

Motivating and leading the culinary team.

Operations Management

Implementing food policies and procedures.

Managing inventory, equipment, and costs.

Ensuring safety and hygiene standards are met according to HACCP guidelines.

Qualifications

Vocational diploma in culinary arts.

At least 10+ years of kitchen experience, including 3+ years as a Sous Chef.

Proven expertise in Japanese cuisine, including sushi, tempura, and robata grilling.

Extensive knowledge of HACCP standards.

Fluent in English and your own language.
