Assistant Restaurant Manager
Based at Emirates Palace Mandarin Oriental, Abu Dhabi within the Food & Beverage Department, the Assistant Restaurant Manager will provide an outstanding guest experience within the outlet concept, assisting in managing the service team in cooperation with the culinary team, and reporting to the Restaurant Manager.
Responsibilities
- Set an example by reporting to duty punctually in business attire, maintaining grooming standards.
- Provide professional and courteous service and ensure employees follow the example.
- Maintain a clean, organized work area.
- Execute and demand the highest level of service and set‑up standards.
- Be knowledgeable of all services and products offered by the hotel.
- Understand the concept of the outlet and train employees accordingly.
- Actively participate in menu design with the outlet Head Chef and organize tastings.
- Know the restaurant scene and gastronomic character of the destination.
- Perform upselling and offer alternatives.
- Produce reports and analysis, present in monthly performance meetings.
- Lead the outlet efficiently in cost and expenses, driving revenue and profit.
- Assist in the preparation of the outlet’s budget.
- Conduct monthly inventory of operating supplies with the stewarding department.
- Ensure correct settlement of all sales and manage outlet floats.
- Implement a flexible work schedule based on business patterns.
- Control payroll, maximizing part‑time utilization.
- Monitor supplies, equipment, reduce spoilage and wastage.
- Attend staff meetings, trainings, and hotel‑initiated trainings.
- Manage kitchen team meetings, fostering teamwork.
- Conduct pre‑shift meetings covering preparation, guest profile, service and menu.
- Report incidents requiring disciplinary actions to the Head of Department.
- Improve product quality by sourcing the best products.
- Monitor and improve guest satisfaction using the available tools.
- Organize outlet‑specific trainings as described by the department.
- Undertake reasonable tasks and secondary duties as assigned.
- Respond to changes in the department as directed by hotel management.
- Handle guest enquiries and complaints courteously and report to the Restaurant Manager for follow‑up.
- Ensure opening and closing procedures are followed.
Qualifications
- Minimum two years’ experience as an Assistant Restaurant Manager in a luxury property; resort experience is a plus.
- Bachelor’s degree in Hotel Management preferred.
- International experience in at least two of the following regions:
Asia, Europe, North America, and preferably the Middle East. - Self‑confidence and conviction.
- Integrity and trustworthiness.
- Commitment to self‑development.
- Proficiency in additional languages preferred;
Italian is a strong advantage.
